Ingredients
• ½ cup unsalted butter
• 2 cups heavy cream
• 2 garlic cloves, minced
• 1 cup freshly grated Parmesan cheese
• Salt, to taste
• Freshly ground black pepper, to taste
• (Optional) A pinch of nutmeg
Instructions
- In a medium saucepan, melt the butter over medium heat.
- Add the minced garlic and sauté until fragrant (about 1 minute), being careful not to brown it.
- Pour in the heavy cream and bring the mixture to a gentle simmer. Reduce the heat to low and let it simmer for 5–7 minutes until it slightly thickens.
- Gradually whisk in the Parmesan cheese until the sauce is smooth and fully combined.
- Season with salt, pepper, and a pinch of nutmeg (if using).
- Remove from heat and serve immediately over freshly cooked pasta. For a looser consistency, stir in a splash of reserved pasta water.
