Ingredients

  • 2 crisp apples (Honeycrisp or Pink Lady), cored and thinly sliced
  • 4 oz (113g) goat cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 1/4 red onion, thinly sliced
  • 1/3 cup dried cranberries
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey
  • Salt and freshly ground black pepper to taste

Instructions

  1. Place mixed greens in a large salad bowl.
  2. Layer apple slices, crumbled goat cheese, toasted walnuts, red onion slices, and dried cranberries on top.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until well combined.
