Ingredients

For the Cake:

  • 🍎 2 cups apples, peeled and diced (Granny Smith or Honeycrisp work well)

  • 🥤 1 cup light brown sugar, packed
  • 🥛 1/4 cup heavy cream
  • 🥄 1 teaspoon vanilla extract

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish or bundt pan.
  • Mix Wet Ingredients: In a large bowl, whisk together melted butter, sugar, eggs, vanilla extract, and buttermilk until smooth.
  • Combine Dry Ingredients: In a separate bowl, combine flour, baking soda, salt, cinnamon, and nutmeg. Gradually add to the wet mixture, stirring until just combined.
  • Fold in Add-ins: Gently fold in the diced apples and chopped pecans.
  • Bake the Cake: Pour the batter into the prepared pan and smooth the top. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Prepare the Caramel Glaze: In a saucepan over medium heat, melt butter. Stir in brown sugar and heavy cream, and bring to a boil. Let simmer for 2 minutes, then remove from heat and stir in vanilla extract.
  • Glaze the Cake: Once the cake is out of the oven, poke holes in it with a skewer or fork. Pour the warm caramel glaze over the cake, spreading evenly.
