Description

I still remember the first time I tried Baked Feta Eggs at a cozy little café tucked away in the heart of my city. The aroma of warm, baked cheese wafted through the air, wrapping around me like a hug on a chilly morning. I was instantly hooked! This delightful dish, with its creamy feta and perfectly baked eggs, felt like a warm, comforting embrace. Fast forward to today, and I’m excited to share my own version of this café favorite that you can whip up in just 30 minutes!

Ingredients

Scale
  • 100 grams feta cheese
  • 8 large eggs
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • optional spinach
  • optional cherry tomatoes
  • optional bell peppers
  • optional mushrooms

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta cheese in the center of an 8x8 inch baking dish.
  3. Generously drizzle olive oil over the feta and around the dish.
  4. Carefully crack each of the 8 large eggs around the feta in the baking dish.
  5. Sprinkle salt and pepper over the eggs to enhance their natural flavor.
  6. Place the baking dish in the oven and bake for 20 to 22 minutes.
  7. Once baked, remove the dish from the oven and let it cool for a minute. Gently stir the eggs and feta together until creamy.
  8. Serve your Baked Feta Eggs warm, presented on crisp toast, or stuffed into a warm pita.

Notes

  • Fresh Ingredients: Start with quality ingredients, especially your feta cheese. I love using a block of feta for its creamy texture and flavor.
  • Seasoning: Don’t skimp on seasoning! Salt and pepper are crucial for enhancing the flavors of the dish.
  • Bake Time Adjustment: Keep an eye on the timer! Check them around the 18-minute mark for softer yolks.
  • Add Veggies: Adding spinach, cherry tomatoes, or bell peppers boosts the nutritional value and adds vibrant color.
  • Serving Suggestions: Serving the baked feta eggs on crisp toast is classic, but warm pitas or flaky croissants are delicious alternatives.
  • Leftover Love: Store leftovers in the fridge; they can be reheated easily.
