Ingredients

Scale
  • 1 avocado
  • ½ cup diced tomatoes
  • 2 tbsp small shallot, minced
  • 1 clove garlic, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 tbsp fresh lime juice
  • Salt to taste
  • ¼ tsp ground cumin
  • ¼ cup fresh cilantro, chopped
  • 4 large eggs
  • ¼ tsp smoked paprika
  • Salt to preference
  • ½ lb spicy sausage
  • 1 ⅓ cups (6 oz) shredded Monterey Jack cheese
  • 4 large tortillas (10-inch)
  • Vegetable oil for cooking

Instructions

  1. Make the Salsa: Dice the avocado and add all salsa ingredients into a mixing bowl. Stir together until well combined; the vibrant colors will brighten any meal!
  2. Prepare the Eggs: In a separate bowl, whisk together the eggs with smoked paprika and salt. Set aside as you get ready for the next steps; they’ll soon be fluffy and delicious!
  3. Cook the Sausage: In a nonstick pan, brown the spicy sausage over medium heat, stirring frequently until fully cooked. Remove with a slotted spoon, leaving some drippings for extra flavor.
  4. Scramble the Eggs: Lower the heat and add the egg mixture to the same pan. Gently scramble until they are soft and just set; you want them warm and fluffy!
  5. Assemble the Burritos: Place a generous ¼ cup of your homemade avocado salsa on each 10-inch tortilla. Follow with a quarter of the cooked sausage, ¼ of the scrambled eggs, and a sprinkle of ⅓ cup cheese.
  6. Roll the Burritos: Fold in the sides of the tortilla before tucking the edges and rolling tightly; make sure everything is secure and your burrito is compact!
  7. Brown the Burritos: Lightly coat a pan with vegetable oil and place the burritos seam-side down. Cover and cook until golden brown, about 3 minutes. Flip and cook again, covered, for another few minutes until crispy.
  8. Serve Warm & Enjoy: Plate your burritos and enjoy them while they’re warm, either solo or with extra salsa on the side for dipping!

Notes

  • Ingredient Quality: Use fresh ingredients, especially for the avocado and tomatoes, to elevate the flavors in your breakfast burritos.
  • Heat Management: Cook the sausage over medium-high heat to ensure it browns properly without drying out. Don't rush the process!
  • Egg Consistency: Avoid overcooking the scrambled eggs; they should remain soft and creamy for the best texture in your burritos.
  • Tortilla Choice: Opt for sturdy tortillas to prevent tearing when filled, ensuring all your delicious ingredients stay snug inside.
  • Salsa Spice Level: Adjust jalapeño quantity based on personal preferences, especially if serving the burritos to kids, for a great family-friendly option.
