When the evening air cools and the cravings for warmth and comfort kick in, there’s nothing quite like a big bowl of rich, creamy Cajun Potato Soup to satisfy your appetite.

Ingredients

Scale
  • 2 tablespoons Vegetable Oil
  • 1 pound Andouille Sausage
  • 1 Onion
  • 2 stalks Celery
  • 1 Red Bell Pepper
  • 3 cloves Garlic
  • 2 tablespoons Cajun Seasoning
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper
  • 4 cups Chicken Broth
  • 4 Russet Potatoes
  • 1 cup Heavy Whipping Cream
  • 1 cup Mild Cheddar Cheese

Instructions

  1. Brown the Sausage: Heat vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook for about 3-4 minutes, until browned. Once done, set it aside to keep the flavors intact.
  2. Sauté the Vegetables: In the same pot, add diced onion, celery, and red bell pepper. Sauté for 5-8 minutes until they soften, then stir in minced garlic for another minute to infuse that delicious aroma.
  3. Prepare the Soup Base: Now it's time to add flavor! Toss in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Pour in the chicken broth along with the cubed potatoes. Simmer on low for 20-25 minutes, or until the potatoes are fork-tender and bursting with flavor.
  4. Finish the Soup: Return the browned sausage to the pot. Add heavy whipping cream and shredded cheddar cheese, stirring until the cheese melts and the soup is creamy, about 5 minutes more.
  5. Garnish and Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy it warm alongside some crusty bread or your favorite crackers.

Notes

  • Adjust Spice Levels: For a milder Cajun Potato Soup, reduce the amount of Cajun seasoning and cayenne pepper to suit your palate.
  • Check Potato Tenderness: Ensure potatoes are fork-tender before adding cream and cheese; this guarantees a smooth, creamy texture in your soup.
  • Watch Cooking Times: When doubling the recipe, extend cook times appropriately as the increased volume can affect how quickly everything cooks.
  • Sauté for Flavor: Browning the andouille sausage well adds depth to the flavors—don’t rush this step!
  • Experiment with Add-ins: Feel free to embellish the soup with extra veggies like baby spinach or even crawfish tails to make it more personalized.
