Ingredients
Scale
- 2 cups premium quality cooked chicken, shredded or diced
- 6 oz traditional egg noodles (about 3 cups dry)
- 1 cup freshly diced carrots
- 1 cup chopped celery
- 1 medium chopped onion
- 3 cloves minced garlic
- 8 cups low-sodium chicken broth
- 2 bay leaves
- 1 tsp fresh thyme (or ½ tsp dried)
- ½ tsp freshly cracked black pepper (adjust to taste)
- 2 tbsp chopped parsley
- 1 tbsp lemon juice (or to taste)
Instructions
- Sauté vegetables. Begin by heating a tablespoon of olive oil in a large pot over medium heat. Add diced onions, carrots, and celery, and sauté until they become tender and fragrant, about 5-7 minutes.
- Add garlic and herbs. Stir in minced garlic, dried thyme, and bay leaves. Continue to cook for another minute until the garlic is aromatic.
- Pour in broth. Gradually add 8 cups of chicken broth to the pot, stirring gently. Bring the mixture to a boil, then reduce the heat to a simmer. Let the broth bubble away for about 10 minutes.
- Introduce chicken. Add diced or shredded cooked chicken to the pot. Simmer until it’s fully cooked (about 15-20 minutes), then remove and shred afterward.
- Mix in noodles. Once the chicken is ready, add 2 cups of egg noodles to the simmering soup. Cook for 8-10 minutes until tender but still al dente.
- Season to taste. Remove the bay leaves and season with salt and pepper according to your preference.
Notes
- Perfect Chicken Choices: Use a combination of dark and white meat for richer flavor.
- Fresh vs. Dried Herbs: Opt for fresh herbs like thyme and parsley when possible.
- Avoid Overcooking: Don’t add noodles too early; they can get mushy.
- Customize to Taste: Feel free to experiment with vegetables.
- Leftover Magic: Save any leftovers! This soup tastes even better the next day.
