Ingredients

Scale
  • 1 cup cottage cheese 🧀
  • 1 1/2 cups all-purpose flour 🍞
  • 1 teaspoon baking powder 🧁
  • 1/2 teaspoon baking soda 🧂
  • 1/4 teaspoon salt 🧂
  • 1/2 cup granulated sugar 🍬
  • 1/4 cup melted butter 🧈
  • 2 large eggs 🥚
  • 1 teaspoon vanilla extract 🍦
  • 1 cup fresh blueberries 🫐
  • 1 tablespoon all-purpose flour (to coat blueberries)

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, combine cottage cheese, sugar, melted butter, eggs, and vanilla extract. Mix until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Toss blueberries with 1 tablespoon of flour to prevent sinking, then gently fold them into the batter.
  • Pour the batter into the prepared baking dish and spread evenly.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool before serving. Enjoy with a dusting of powdered sugar or a dollop of whipped cream, if desired.

Notes

  • Substitute Greek yogurt for cottage cheese if preferred.
  • Frozen blueberries can be used; do not thaw before mixing.
  • Store leftovers in an airtight container for up to 3 days.
