Ingredients

Scale
  • 4 boneless, skinless chicken breasts 🐓
  • 2 tablespoons olive oil or butter 🧈
  • 1 medium onion, diced 🧅
  • 3 cloves garlic, minced 🧄
  • 8 ounces mushrooms, sliced 🍄
  • 1 cup chicken broth 🍗
  • 1 cup heavy cream 🥛
  • 1/2 teaspoon dried thyme 🌿
  • 1/4 teaspoon paprika
  • Salt and pepper to taste 🧂
  • 1/4 cup grated Parmesan cheese (optional) 🧀
  • Fresh parsley for garnish 🌿

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and paprika.
  • Sear the chicken for 3-4 minutes on each side until golden brown. Remove and set aside.
  • In the same skillet, sauté onions and garlic until fragrant, about 2 minutes. Add mushrooms and cook until softened.
  • Pour in the chicken broth and bring to a simmer. Add thyme and adjust seasoning with salt and pepper.
  • Stir in heavy cream and Parmesan cheese (if using), mixing until the sauce is creamy and smooth.
  • Return the chicken to the skillet, spoon sauce over the top, and simmer for 10-12 minutes until the chicken is cooked through.
  • Garnish with fresh parsley and serve immediately.

Notes

  • For a lighter option, substitute heavy cream with half-and-half or unsweetened almond milk.
  • Pair with rice, mashed potatoes, or pasta for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
