Description

A refreshing and easy recipe for corn salsa, perfect for summer gatherings.


Ingredients

  • 2 cups corn, fresh or frozen
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons lime juice
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl, combine corn, red bell pepper, red onion, cilantro, and jalapeño.
  2. Add lime juice and salt; mix well.
  3. Taste and adjust seasoning if necessary.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Great as a dip with tortilla chips or as a topping for tacos.
  • Can be made a day ahead for better flavor.
