Ingredients

- 2 cups corn, fresh or frozen
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- 1/2 teaspoon salt
Instructions
- In a large bowl, combine corn, red bell pepper, red onion, cilantro, and jalapeño.
- Add lime juice and salt; mix well.
- Taste and adjust seasoning if necessary.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Great as a dip with tortilla chips or as a topping for tacos.
- Can be made a day ahead for better flavor.
