Description
A deliciously sweet and savory dish featuring roasted sweet potatoes drizzled with maple syrup, crunchy toasted walnuts, and creamy goat cheese. Perfect as a side dish for any occasion!
Ingredients
4 medium sweet potatoes, peeled and cubed
2 tbsp olive oil
Salt and pepper to taste
1/4 cup maple syrup
1/2 cup walnuts, chopped
4 oz goat cheese, crumbled
1 tbsp fresh thyme (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sweet potato cubes in olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
Roast for 25-30 minutes, turning halfway, until tender and slightly caramelized.
While potatoes roast, toast walnuts in a skillet over medium heat for 3-4 minutes.
Once sweet potatoes are done, drizzle with maple syrup, sprinkle with walnuts, and top with crumbled goat cheese.
Garnish with fresh thyme and serve. Enjoy!
