Description

A deliciously sweet and savory dish featuring roasted sweet potatoes drizzled with maple syrup, crunchy toasted walnuts, and creamy goat cheese. Perfect as a side dish for any occasion!


Ingredients

  • 🥔 4 medium sweet potatoes, peeled and cubed
  • 🫒 2 tbsp olive oil
  • 🧂 Salt and pepper to taste
  • 🍁 1/4 cup maple syrup
  • 🌰 1/2 cup walnuts, chopped
  • 🧀 4 oz goat cheese, crumbled
  • 🌿 1 tbsp fresh thyme (optional)

Instructions

1️⃣ Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Toss sweet potato cubes in olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
3️⃣ Roast for 25-30 minutes, turning halfway, until tender and slightly caramelized.
4️⃣ While potatoes roast, toast walnuts in a skillet over medium heat for 3-4 minutes.
5️⃣ Once sweet potatoes are done, drizzle with maple syrup, sprinkle with walnuts, and top with crumbled goat cheese.
