4 slices of halloumi cheese 🧀
2 English muffins 🍞
2 large eggs 🥚
1 tablespoon butter 🧈
1 avocado, sliced 🥑
2 tablespoons mayonnaise
1 handful of arugula (or spinach) 🥬
Salt and pepper to taste 🧂
Instructions
Heat a skillet over medium heat and sear the halloumi slices until golden, about 2-3 minutes per side. Set aside.
Toast the English muffins in a toaster or skillet until lightly crispy.
In the same skillet, melt butter and fry the eggs to your preferred doneness (sunny-side up recommended). Sprinkle with salt and pepper.
Spread mayonnaise on the bottom halves of the toasted muffins. Layer with arugula, avocado slices, fried eggs, and seared halloumi.
Cover with the top halves of the muffins and press gently. Serve immediately!
Notes
Feel free to substitute arugula with spinach or other greens of your choice.
Add a slice of tomato for extra freshness!
