Description

Start your morning with these delicious Halloumi Breakfast Sandwiches! They’re savory, cheesy, and packed with flavor, perfect for a quick breakfast or brunch.


Ingredients

  • 4 slices of halloumi cheese 🧀
  • 2 English muffins 🍞
  • 2 large eggs 🥚
  • 1 tablespoon butter 🧈
  • 1 avocado, sliced 🥑
  • 2 tablespoons mayonnaise
  • 1 handful of arugula (or spinach) 🥬
  • Salt and pepper to taste 🧂

Instructions

  • Heat a skillet over medium heat and sear the halloumi slices until golden, about 2-3 minutes per side. Set aside.
  • Toast the English muffins in a toaster or skillet until lightly crispy.
  • In the same skillet, melt butter and fry the eggs to your preferred doneness (sunny-side up recommended). Sprinkle with salt and pepper.
  • Spread mayonnaise on the bottom halves of the toasted muffins. Layer with arugula, avocado slices, fried eggs, and seared halloumi.
  • Cover with the top halves of the muffins and press gently. Serve immediately!
