- 4 slices of halloumi cheese 🧀
- 2 English muffins 🍞
- 2 large eggs 🥚
- 1 tablespoon butter 🧈
- 1 avocado, sliced 🥑
- 2 tablespoons mayonnaise
- 1 handful of arugula (or spinach) 🥬
- Salt and pepper to taste 🧂
Instructions
- Heat a skillet over medium heat and sear the halloumi slices until golden, about 2-3 minutes per side. Set aside.
- Toast the English muffins in a toaster or skillet until lightly crispy.
- In the same skillet, melt butter and fry the eggs to your preferred doneness (sunny-side up recommended). Sprinkle with salt and pepper.
- Spread mayonnaise on the bottom halves of the toasted muffins. Layer with arugula, avocado slices, fried eggs, and seared halloumi.
- Cover with the top halves of the muffins and press gently. Serve immediately!
