  • 1 lb ground beef (80/20 or leaner)
  • 1 small onion, diced
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 1/2 cups beef broth (or water)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional, for topping)

  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1/4 teaspoon paprika or chili powder for extra flavor

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Brown the beef:
    • In a skillet over medium-high heat, cook the ground beef and diced onion until the beef is no longer pink. Drain any excess grease.
  • Combine ingredients:
    • In the baking dish, mix the cooked beef, uncooked rice, cream of mushroom soup, beef broth (or water), garlic powder, salt, and black pepper. Stir in optional vegetables if desired.
  • Bake:
    • Cover the dish tightly with aluminum foil and bake for 30 minutes.
    • Remove the foil, stir gently, and top with shredded cheddar cheese if using.
    • Return to the oven uncovered and bake for an additional 10–15 minutes, or until the rice is tender and the cheese is melted.
  • Serve:
    • Let the casserole rest for 5 minutes before serving. Enjoy warm!

  • For a lighter version, use ground turkey or chicken instead of beef.
  • Swap cream of mushroom soup for cream of chicken or celery to change the flavor.
