- 1 large egg
- 1 tablespoon Dijon mustard
- 1 tablespoon white wine vinegar
- 1 cup oil (vegetable or olive)
- 1/2 teaspoon salt
- 1 teaspoon lemon juice (optional)
Instructions
- In a tall container or mixing bowl, combine the egg, Dijon mustard, and vinegar.
- Using an immersion blender, blend the mixture for about 20 seconds until well combined.
- While blending, slowly drizzle in the oil until the mayonnaise thickens.
- Add salt and lemon juice to taste and blend briefly to incorporate.
- Store in a sealed container in the refrigerator.
