  • 1 cup granulated sugar
  • 2 tablespoons lemon juice (freshly squeezed)

Instructions

  • Combine ingredients:
    • In a medium saucepan, stir together the chopped pineapple, sugar, lemon juice, and (optional) lemon zest.
  • Cook over medium heat:
    • Bring the mixture to a gentle boil, then reduce to a simmer.
    • Stir frequently to prevent sticking and cook for 20–25 minutes, or until the jam thickens.
  • Check consistency:
    • To test if the jam is set, spoon a small amount onto a chilled plate. If it gels or wrinkles when you push it with your finger, it’s ready.
  • Cool and store:
    • Remove from heat and let the jam cool slightly.
    • Transfer to a clean, sterilized jar or airtight container. Store in the refrigerator.
