Description
This Pineapple Jam is a sweet, tangy spread that brings a taste of the tropics to your breakfast table. πβ¨ Made with simple ingredients and no pectin, itβs easy to whip up and perfect for spreading on toast, biscuits, or using as a fruity filling in baked goods.
Ingredients
Scale
- 2 cups fresh pineapple, finely chopped (about 1 medium pineapple)
- 1 cup granulated sugar
- 2 tablespoons lemon juice (freshly squeezed)
- 1/2 teaspoon lemon zest (optional, for extra brightness)
Instructions
- Combine ingredients:
- In a medium saucepan, stir together the chopped pineapple, sugar, lemon juice, and (optional) lemon zest.
- Cook over medium heat:
- Bring the mixture to a gentle boil, then reduce to a simmer.
- Stir frequently to prevent sticking and cook for 20β25 minutes, or until the jam thickens.
- Check consistency:
- To test if the jam is set, spoon a small amount onto a chilled plate. If it gels or wrinkles when you push it with your finger, itβs ready.
- Cool and store:
- Remove from heat and let the jam cool slightly.
- Transfer to a clean, sterilized jar or airtight container. Store in the refrigerator.
Notes
- Thickness: If you prefer a smoother texture, mash the pineapple with a fork or use an immersion blender after cooking.
- Storage: Keep refrigerated for up to 2 weeks. For longer storage, use proper canning methods.
- Sweetness Adjustments: Feel free to add more or less sugar depending on your taste and the sweetness of the pineapple.
