  • 1/4 cup Lime Juice
  • 1 tablespoon Lime Zest
  • 1 tablespoon Honey
  • 2 teaspoons Cumin
  • 1 teaspoon Chili Powder

  • 1 pound Raw, Peeled, Deveined Shrimp
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 Lime Wedges (for serving)
  • 8 Warmed Tortillas (for serving)
  • 1/2 cup Cotija Cheese (for serving)
  • 1/4 cup Pickled Onions (for serving)
  • 1/2 cup Plain Greek Yogurt
  • 1 Lime (juiced and zested)
  • 1 clove Garlic Clove (minced)
  • 1 teaspoon Honey
  • 1/4 teaspoon Pepper

Instructions

  1. Prep the Oven: Preheat your oven to 425°F. Line a baking sheet with foil or spray it lightly with cooking spray.
  2. Whisk the Marinade: In a bowl, combine olive oil, lime juice, lime zest, honey, cumin, chili powder, smoked paprika, salt, black pepper, and minced garlic. Whisk until well blended.
  3. Roast the Veggies: On your prepared baking sheet, spread the sliced bell peppers and onions. Drizzle half of the marinade over them and toss to coat. Roast for 15-20 minutes.
  4. Marinate the Shrimp: While your veggies are roasting, place the shrimp in a separate bowl and pour the remaining marinade over them. Toss well to coat.
  5. Make Lime Crema: In another bowl, whisk together plain Greek yogurt, lime juice, lime zest, minced garlic, honey, salt, and pepper. Allow to sit for at least 15 minutes.
  6. Add Shrimp to the Pan: Once the veggies are roasted, push them to one side of the baking sheet. Spread the marinated shrimp on the empty side. Roast for 6-8 minutes.
  7. Assemble Fajitas: Warm your tortillas, then fill each with roasted veggies and shrimp, drizzle with lime crema, and top with cotija cheese and pickled onions.
