- 1/2 cup low-sodium soy sauce
- 1/3 cup honey
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup water
- 1 tbsp cornstarch
- Optional: Sesame seeds and chopped green onions for garnish
Instructions
- Prepare the slow cooker:
- Place the chicken thighs in the slow cooker.
- Make the teriyaki sauce:
- In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour over the chicken.
- Cook:
- Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is tender and fully cooked.
- Thicken the sauce:
- Remove the chicken from the slow cooker and set aside. In a small bowl, mix water and cornstarch to create a slurry. Add the slurry to the slow cooker and stir. Let the sauce cook on high for 10–15 minutes until thickened.
- Shred or slice the chicken:
- Shred the chicken with two forks or slice it into pieces, then return it to the thickened sauce.
- Serve:
- Serve over rice or noodles and garnish with sesame seeds and green onions.

- Substitute chicken thighs with chicken breasts if preferred, but adjust the cooking time to prevent overcooking.
