  • 2 lbs boneless, skinless chicken thighs (or chicken breasts)
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup honey
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup water
  • 1 tbsp cornstarch
  • Optional: Sesame seeds and chopped green onions for garnish

Instructions

  • Prepare the slow cooker:
    • Place the chicken thighs in the slow cooker.
  • Make the teriyaki sauce:
    • In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour over the chicken.
  • Cook:
    • Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is tender and fully cooked.
  • Thicken the sauce:
    • Remove the chicken from the slow cooker and set aside. In a small bowl, mix water and cornstarch to create a slurry. Add the slurry to the slow cooker and stir. Let the sauce cook on high for 10–15 minutes until thickened.
  • Shred or slice the chicken:
    • Shred the chicken with two forks or slice it into pieces, then return it to the thickened sauce.
  • Serve:
    • Serve over rice or noodles and garnish with sesame seeds and green onions.

Notes

  • Substitute chicken thighs with chicken breasts if preferred, but adjust the cooking time to prevent overcooking.
