Delicious and easy to make, these Sausage Egg and Cheese Cups are perfect for breakfast or a quick snack.

- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 pound breakfast sausage
- 1/2 cup diced bell peppers
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the sausage over medium heat until browned.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Fold in the cheese and bell peppers.
- Grease a muffin tin and divide the sausage evenly among the cups.
- Pour the egg mixture over the sausage.
- Bake for 20-25 minutes or until the eggs are set.
- Allow to cool slightly before removing from the muffin tin.
Notes
- For a spicier version, add chopped jalapeños.
- These cups can be made ahead and reheated for convenience.
