Description

Delicious and easy to make, these Sausage Egg and Cheese Cups are perfect for breakfast or a quick snack.


Ingredients

Scale
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 pound breakfast sausage
  • 1/2 cup diced bell peppers
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Fold in the cheese and bell peppers.
  5. Grease a muffin tin and divide the sausage evenly among the cups.
  6. Pour the egg mixture over the sausage.
  7. Bake for 20-25 minutes or until the eggs are set.
  8. Allow to cool slightly before removing from the muffin tin.

Notes

  • For a spicier version, add chopped jalapeños.
  • These cups can be made ahead and reheated for convenience.
