Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix the panko breadcrumbs with the whole milk in a small bowl and let them soak for about 5 minutes.
  3. Combine the ground beef, ground pork, soaked breadcrumbs (with any leftover milk), egg, minced garlic, chopped onion, chipotle peppers, adobo sauce, smoked paprika, cumin, oregano, salt, pepper, and cilantro in a large bowl. Mix gently.
  4. Shape the mixture into 1½-inch meatballs and place them on the prepared baking sheet.
  5. Drizzle the meatballs with 1 tablespoon of olive oil and coat the surfaces gently.
  6. Bake in the preheated oven for 18 to 20 minutes until they reach an internal temperature of 160°F (70°C).
  7. Allow the meatballs to rest on the baking sheet for 5 minutes before serving.
