Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather all your ingredients and prepare your baking sheet with parchment paper.
  2. Peel and chop the sweet potatoes into ½-inch chunks, and chop the onion into 1-inch pieces. Spread evenly on the baking sheet.
  3. Toss sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder. Roast for about 20 minutes.
  4. Push roasted vegetables to the side, add chopped broccoli, drizzle with olive oil and salt, and nestle chicken breasts among the veggies. Brush chicken with BBQ sauce.
  5. Return to the oven and bake for an additional 15-20 minutes until chicken is cooked through and broccoli is crisp-tender.
