- Preheat your oven to 400°F (200°C). Gather all your ingredients and prepare your baking sheet with parchment paper.
- Peel and chop the sweet potatoes into ½-inch chunks, and chop the onion into 1-inch pieces. Spread evenly on the baking sheet.
- Toss sweet potatoes and onions with olive oil, salt, garlic powder, and chipotle powder. Roast for about 20 minutes.
- Push roasted vegetables to the side, add chopped broccoli, drizzle with olive oil and salt, and nestle chicken breasts among the veggies. Brush chicken with BBQ sauce.
- Return to the oven and bake for an additional 15-20 minutes until chicken is cooked through and broccoli is crisp-tender.
- Remove from oven, let cool slightly, then shred the chicken with forks, mixing with BBQ sauce.
- Divide the shredded chicken, roasted sweet potatoes, onions, and broccoli into bowls. Serve immediately.
