- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, whisk together the melted unsalted butter, packed brown sugar, and granulated sugar until smooth and well combined.
- Add the two large eggs one at a time, whisking vigorously after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until no lumps remain.
- Gradually mix the dry ingredients into the wet mixture using a spatula or wooden spoon, mixing gently until just combined.
- Fold in the Biscoff cookie butter gently into your batter until a marbled effect is achieved.
- Fold the crushed Biscoff cookies into the batter, reserving some for topping later.
- Pour the batter into the prepared baking pan, spreading it evenly. Sprinkle reserved crushed Biscoff cookies on top.
