  • 2 pounds beef chuck cut into 1-inch cubes
  • 2 tablespoons vegetable oil for browning beef
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 2 medium tomatoes chopped
  • 2 cups beef broth
  • 1 cup water
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 bay leaf to remove before serving
  • salt and pepper to taste

Method
 

Step-by-Step Instructions for Carne Guisada
  1. In a large pot or Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat.
  2. Carefully add 2 pounds of beef chuck cubes to the pot and sear the beef on all sides for about 5-7 minutes.
  3. Once the beef is browned, toss in 1 chopped medium onion and 4 cloves of minced garlic, sautéing for 3-4 minutes.
  4. Add 2 chopped medium tomatoes into the mixture and stir well.
  5. Sprinkle in 2 teaspoons of ground cumin, 2 teaspoons of chili powder, 1 teaspoon of paprika, 1 teaspoon of dried oregano, and salt and pepper to taste.
  6. Pour in 2 cups of beef broth and 1 cup of water while scraping the bottom of the pot.
  7. Once boiling, add 1 bay leaf into the pot.
  8. Reduce the heat to low, cover the pot, and let it simmer gently for about 1.5 to 2 hours.
  9. If adding optional vegetables, add 1 cup of chopped bell peppers and 1 cup of chopped carrots about 30 minutes before the cooking time ends.
  10. Before serving, taste your stew and adjust the seasoning if needed, then remove the bay leaf.
