- Preheat your oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.
- Prepare your mashed potatoes by boiling until tender, then mashing until smooth and letting them cool.
- In a large bowl, whisk together the eggs, sour cream, and melted butter until smooth.
- Fold the cooled mashed potatoes into the egg mixture, then add and mix the shredded cheddar cheese.
- Mix in the garlic powder, onion powder, salt, and black pepper, and fold in green onions if using.
- Spoon the mixture into the prepared muffin tin, filling each about three-quarters full.
- Sprinkle grated Parmesan cheese on top of each muffin before baking, if desired.
- Bake for 25 to 30 minutes until golden brown and a toothpick inserted comes out clean.
- Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
