- Start by washing and halving the Brussels sprouts, setting them aside for even cooking. Next, cut the beef sirloin into bite-sized pieces.
- In a large skillet, pour in 2 tablespoons of extra virgin olive oil and heat over medium-high heat.
- Once the oil is hot, add the beef sirloin in a single layer to the skillet. Sear the beef for approximately 3 minutes on each side.
- Utilizing the same skillet, reduce the heat to medium and add the freshly minced garlic. Sauté for about 30 seconds until fragrant.
- Add the halved Brussels sprouts to the skillet. Season them with salt and pepper, then sauté for 5-7 minutes.
- Once the Brussels sprouts are nicely caramelized, return the seared beef to the skillet. Pour in the low-sodium soy sauce and sprinkle the dried thyme on top.
- After simmering, remove the skillet from heat and dish out the mixture onto plates.
