Preparation
- Preheat your oven to 375°F (190°C).
 - Heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
 - Add fresh cranberries and cook for about 5 minutes, stirring occasionally.
 - Stir in honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook for an additional 3-4 minutes until thickened.
 - Let the mixture cool.
 - Cut a pocket in the center of each chicken breast.
 - Stuff each chicken breast with brie cheese pieces and the cooled cranberry mixture.
 - Secure the opening with toothpicks.
 - Sear the stuffed chicken breasts in a hot skillet for 2-3 minutes on each side.
 - Combine panko breadcrumbs and melted butter in a small bowl.
 - Spread the breadcrumb mixture over the stuffed chicken breasts.
 - Bake in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F (74°C).
 - Let the chicken rest for 5 minutes before serving.
 - Garnish with chopped fresh parsley before serving.
