Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat.
  3. Add fresh cranberries and cook for about 5 minutes, stirring occasionally.
  4. Stir in honey, orange juice, ground cinnamon, ground ginger, salt, and black pepper. Cook for an additional 3-4 minutes until thickened.
  5. Let the mixture cool.
  6. Cut a pocket in the center of each chicken breast.
  7. Stuff each chicken breast with brie cheese pieces and the cooled cranberry mixture.
  8. Secure the opening with toothpicks.
  9. Sear the stuffed chicken breasts in a hot skillet for 2-3 minutes on each side.
  10. Combine panko breadcrumbs and melted butter in a small bowl.
  11. Spread the breadcrumb mixture over the stuffed chicken breasts.
  12. Bake in the preheated oven for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  13. Let the chicken rest for 5 minutes before serving.
  14. Garnish with chopped fresh parsley before serving.
