Method
 

Step‑by‑Step Instructions for Falafel
  1. Soak the chickpeas in water for at least 8 hours, then drain and rinse.
  2. In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, dill, cumin, cardamom, salt, and pepper. Pulse until slightly coarse.
  3. Transfer to a bowl, mix in flour and baking soda if desired, and form into small balls.
  4. Preheat air fryer to 375°F (190°C) for about 3 minutes.
  5. Lightly spray the air fryer basket with cooking oil and arrange falafel in a single layer. Air fry for 12-14 minutes, shaking halfway through.
  6. Remove from air fryer and let cool on a paper towel-lined plate before serving.
