Equipment

  • Large Pot
  • Frying Pan
  • slotted spoon

Method

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil. Add the gnocchi and cook according to package instructions, typically about 2-3 minutes. Use a slotted spoon to gently remove them and set aside in a colander to drain while you prepare the next steps.
  2. In a large frying pan, heat two tablespoons of olive oil over medium-high heat until it shimmers. Add the cooked gnocchi to the pan in a single layer, and allow them to cook undisturbed for about 2-3 minutes for a golden-brown crust.
  3. Gently stir the gnocchi to chance sides, cooking for an additional 2-3 minutes until they’re crispy all around.
  4. Once the gnocchi is beautifully crispy, reduce the heat to medium and add the minced garlic to the pan. Sauté the garlic for about 1 minute until fragrant.
  5. Toss the 4 cups of fresh spinach into the pan with the gnocchi and garlic. Stir gently for about 2-3 minutes until the spinach wilts down.
  6. Once the spinach is wilted, season the mixture with salt, black pepper, and optional red pepper flakes. Stir to distribute the seasonings evenly.
  7. Remove the pan from heat and sprinkle the crumbled feta cheese over the mixture. Stir gently to combine and serve immediately.
