Step-by-Step Instructions
- Begin by bringing a large pot of salted water to a rolling boil. Add the gnocchi and cook according to package instructions, typically about 2-3 minutes. Use a slotted spoon to gently remove them and set aside in a colander to drain while you prepare the next steps.
- In a large frying pan, heat two tablespoons of olive oil over medium-high heat until it shimmers. Add the cooked gnocchi to the pan in a single layer, and allow them to cook undisturbed for about 2-3 minutes for a golden-brown crust.
- Gently stir the gnocchi to chance sides, cooking for an additional 2-3 minutes until they’re crispy all around.
- Once the gnocchi is beautifully crispy, reduce the heat to medium and add the minced garlic to the pan. Sauté the garlic for about 1 minute until fragrant.
- Toss the 4 cups of fresh spinach into the pan with the gnocchi and garlic. Stir gently for about 2-3 minutes until the spinach wilts down.
- Once the spinach is wilted, season the mixture with salt, black pepper, and optional red pepper flakes. Stir to distribute the seasonings evenly.
- Remove the pan from heat and sprinkle the crumbled feta cheese over the mixture. Stir gently to combine and serve immediately.
