Step-by-Step Instructions
- In a large mixing bowl, blend 2 cups of mashed potatoes with ½ cup of all-purpose flour, ¼ cup of grated Parmesan cheese, 1 egg, ½ teaspoon of salt, and ¼ teaspoon of black pepper until smooth.
- Take small portions of the mixture and shape them into fry-like pieces, about ½ inch thick, on a parchment-lined baking sheet.
- In a frying pan, pour enough oil to cover the bottom by ½ inch and heat to around 350°F (175°C).
- Carefully add shaped fries into the hot oil in batches, frying each side for about 4-5 minutes until golden brown and crispy.
- Remove fries from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve fries warm with your favorite dipping sauces.

Notes
Use cold mashed potatoes for better shape retention during frying. Fry in batches to avoid steaming, and reheat leftovers in an oven to restore crunch.
