  1. Prepare Potatoes: Peel your medium yellow potatoes, chop them into small chunks, and boil them in salted water for about 15-20 minutes until they're tender.
  2. Mash Potatoes: Once boiled, transfer the potatoes to a strainer, pushing them through to create a smooth, fluffy mash.
  3. Combine Ingredients: In a large mixing bowl, combine the mashed potatoes with shredded sharp cheddar cheese and cornstarch. Knead the mixture until it forms a cohesive dough.
  4. Shape and Freeze Dough: Divide the dough into two halves, flatten each half into sandwich bags and place them in the freezer for about 20 minutes.
  5. Cut and Re-freeze: Remove the dough from the freezer and cut it into strips about the thickness of your pinky finger. Place the cut strips back in the freezer for another 20 minutes to maintain their shape while frying.
  6. Fry: Heat your vegetable oil to 350°F (180°C) and fry the frozen potato strips in batches for 3-4 minutes until golden brown and crispy.
  7. Serve: Transfer the potato cheese sticks to a wire rack to cool slightly. Serve them warm with a side of ketchup for dipping.
