Step-by-Step Instructions
  1. Peel the two large carrots and grate them using a box grater or a food processor. Place the grated carrots into a large mixing bowl.
  2. Core the two medium apples and chop them into small, bite-sized pieces. Add the diced apples directly into the bowl with the carrots.
  3. Finely shred one cup of red cabbage and add it to the bowl along with the carrots and apples.
  4. Stir in the ½ cup of raisins or dried cranberries along with the ½ cup of chopped walnuts or pecans into the mixing bowl.
  5. In a separate small bowl, whisk together the ¼ cup of plain Greek yogurt, ¼ cup of mayonnaise, 2 tablespoons of fresh orange juice, 1 tablespoon of lemon juice, and 1 teaspoon of honey until smooth.
  6. Pour the creamy dressing over the salad mixture in the large bowl and gently toss everything together.
  7. Taste the salad and adjust the seasoning by adding more salt, pepper, or honey if needed.
