- Peel the two large carrots and grate them using a box grater or a food processor. Place the grated carrots into a large mixing bowl.
- Core the two medium apples and chop them into small, bite-sized pieces. Add the diced apples directly into the bowl with the carrots.
- Finely shred one cup of red cabbage and add it to the bowl along with the carrots and apples.
- Stir in the ½ cup of raisins or dried cranberries along with the ½ cup of chopped walnuts or pecans into the mixing bowl.
- In a separate small bowl, whisk together the ¼ cup of plain Greek yogurt, ¼ cup of mayonnaise, 2 tablespoons of fresh orange juice, 1 tablespoon of lemon juice, and 1 teaspoon of honey until smooth.
