- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Place 30 Ritz crackers in a single layer on the prepared baking sheet.
- Spoon a dollop of dulce de leche onto the center of each cracker.
- Press remaining Ritz crackers on top of the dulce de leche to form sandwiches.
- Bake for 5-7 minutes until golden and warm.
- Allow cookies to cool slightly on the baking sheet.
- Melt dark chocolate chips and melting wafers together.
- Dip each sandwich in the melted chocolate and let excess drip off.
- Sprinkle sea salt over dipped cookies while chocolate is wet, if desired.
- Allow the chocolate to set completely at room temperature.
