Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, combine melted butter with the sugars until light and fluffy.
  4. Beat in the eggs one at a time followed by the vanilla extract until smooth.
  5. Gradually mix in the dry ingredient blend and milk until just combined.
  6. Gently fold in the finely chopped apples.
  7. Fill the cupcake liners about two-thirds full with the batter.
  8. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  9. While cupcakes cool, whip together cream cheese and powdered sugar until smooth. Add vanilla if desired.
  10. Once cooled, frost each cupcake with the cream cheese frosting.
