  • 1 teaspoon sea salt
  • ½ teaspoon smoked paprika
  • 1 teaspoon ground allspice

  • 1 can (14 oz.) full-fat coconut milk
  • 1 cup organic chicken stock, low-sodium
Veggies

Preparation Steps
  1. Marinate the Chicken: In a large bowl, combine the chicken pieces with browning, Jamaican Green Seasoning, sea salt, All-Purpose Blend, smoked paprika, and curry powder. Mix thoroughly, coat evenly, marinate in a ziplock for at least 3 hours.
  2. Sear the Chicken: Heat a skillet over medium-high, add 2 tablespoons of olive oil. Sear marinated chicken for 3-4 minutes each side, then set aside.
  3. Bloom the Spices: In the same skillet, heat another 2 tablespoons of olive oil, add Jamaican curry powder, and stir for 2-3 minutes to deepen color and aroma.
  4. Sauté Aromatics and Vegetables: Add garlic, ginger, scotch bonnet, green onions, carrots, and bell pepper. Sauté for about 5 minutes until tender, add spices.
  5. Combine the Liquids: Pour in coconut milk, chicken stock, and Jamaican pepper sauce, bringing to a gentle boil.
  6. Simmer the Curry: Return seared chicken, cubed potatoes, scallion, and thyme. Cover and simmer for 20-25 minutes, stirring occasionally.
  7. Serve and Garnish: Once thickened, serve with rice or vegetables, garnishing with chopped scallions or red pepper flakes.
