Ingredients
  

For the Chicken
  • 2 breasts or thighs boneless skinless chicken Opt for thighs for extra juiciness.
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice Brightens the flavor.
  • 2 cloves garlic Minced.
  • 1 tablespoon chipotle chili powder Adjust to spice preference.
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper Freshly cracked.
For the Bowl
  • 1 cup cooked black beans Hearty protein source.
  • 1 cup corn Grilled, roasted, or canned.
  • 1 medium avocado Sliced.
  • ½ cup fresh cilantro Chopped.
For the Creamy Sauce
  • ½ cup sour cream or Greek yogurt Greek yogurt is healthier.
  • 2 tablespoons chipotle peppers in adobo Minced.
  • 1 teaspoon garlic powder
  • 1 tablespoon honey Adjust for sweetness.
  • 2 tablespoons lime juice For the sauce.

Method
 

Marinating and Cooking
  1. In a mixing bowl, combine olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and black pepper. Add chicken and marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until fully cooked. Let it rest before slicing.
  3. Warm black beans in a small saucepan over medium heat, adding cumin and salt. Heat for about 5 minutes.
  4. Grill or roast corn until lightly charred or drain and rinse if using canned corn. Warm up for 2 minutes if canned.
Make Sauce and Assemble
  1. Whisk together sour cream or Greek yogurt, lime juice, chipotle peppers, garlic powder, and honey until smooth. Adjust seasoning to taste.
  2. In a serving bowl, layer black beans, corn, sliced avocado, and chicken. Drizzle with creamy sauce and top with cilantro.
