Marinating and Cooking
- In a mixing bowl, combine olive oil, lime juice, minced garlic, chipotle chili powder, smoked paprika, cumin, salt, and black pepper. Add chicken and marinate for at least 30 minutes.
- Heat a grill or skillet over medium-high heat. Cook marinated chicken for 6-7 minutes per side until fully cooked. Let it rest before slicing.
- Warm black beans in a small saucepan over medium heat, adding cumin and salt. Heat for about 5 minutes.
- Grill or roast corn until lightly charred or drain and rinse if using canned corn. Warm up for 2 minutes if canned.
Make Sauce and Assemble
- Whisk together sour cream or Greek yogurt, lime juice, chipotle peppers, garlic powder, and honey until smooth. Adjust seasoning to taste.
- In a serving bowl, layer black beans, corn, sliced avocado, and chicken. Drizzle with creamy sauce and top with cilantro.
