Ingredients
  

Cookie Base
  • 1 box Devil's Food cake mix
  • 2 large eggs
  • cup canola or vegetable oil
  • 1 drop black food coloring (optional)
Buttercream Frosting
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2-4 tablespoons milk adjust for desired consistency
  • 1 drop green food coloring
Decoration
  • ¼ cup round green sprinkles
  • ¼ cup Halloween sprinkles
  • 1 cup candy eyeballs
  • 12 pieces pretzel sticks

Method
 

Steps
  1. Preheat your oven to 350 degrees F (175 degrees C) and lightly grease three 12-count mini muffin pans.
  2. In a large mixing bowl, combine the Devil's Food cake mix, large eggs, canola oil, and optional black food coloring until smooth.
  3. Scoop approximately ½ tablespoon of dough into each muffin cavity, flattening it to create a disk shape.
  4. Bake for 8-10 minutes until edges are set, then indent each cookie with a tablespoon to create a cavity.
  5. Beat softened butter with an electric mixer until creamy, then gradually add powdered sugar, vanilla extract, and salt until fluffy.
  6. Add milk to make the buttercream pipeable, then mix in green food coloring until desired shade is achieved.
  7. Pipe the green buttercream frosting into the cooled cookie cups generously.
  8. Decorate with green sprinkles, candy eyeballs, and Halloween sprinkles; insert pretzel sticks as stir sticks.
  9. Serve your delightful cookie cups on a decorative platter and enjoy!
