For the Marinade
  • 2 stalks Fresh lemongrass minced
  • ¼ cup Soy sauce
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Honey
  • 2 tablespoons Lime juice
  • 1 teaspoon Garlic powder
  • ½ teaspoon Ground black pepper
  • 1 teaspoon Salt
For the Chicken
  • 1.5 pounds Chicken thighs bone-in or boneless

Method
 

Preparation
  1. In a medium bowl, mix together the minced lemongrass, soy sauce, vegetable oil, honey, lime juice, garlic powder, black pepper, and salt until well combined.
  2. Add the chicken thighs to the marinade, turning them gently to ensure they are entirely coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken thighs from the marinade and let any excess drip off. Grill the chicken for about 6-8 minutes on each side.
  5. After grilling, remove the chicken and let it rest for about 5 minutes before serving.
