- In a medium bowl, mix together the minced lemongrass, soy sauce, vegetable oil, honey, lime juice, garlic powder, black pepper, and salt until well combined.
- Add the chicken thighs to the marinade, turning them gently to ensure they are entirely coated. Cover and refrigerate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Remove the chicken thighs from the marinade and let any excess drip off. Grill the chicken for about 6-8 minutes on each side.
