Step-by-Step Instructions for Gyeran Mari
  1. Whisk together the eggs, salt, and pepper until frothy, then fold in the green onions and carrots.
  2. Heat the non-stick pan over low heat and add the neutral oil, allowing it to warm.
  3. Pour in ⅓ of the egg mixture and cook until the edges begin to set, about 2–3 minutes.
  4. Gently roll the omelette towards one side of the pan, creating a tight roll.
  5. Add the next ⅓ of the egg mixture and cook until golden, about 2–3 minutes.
  6. After rolling the second layer, cook the final ⅓ of the mixture until just set, about 2 minutes.
  7. Transfer the rolled Gyeran Mari to a cool surface and let it rest for a couple of minutes.
  8. Slice the omelette into 6 to 8 pieces and serve warm or at room temperature.
