For the Shrimp and Broccoli
  • 1 pound large shrimp (peeled & deveined) may use assorted seafood
  • 2 tablespoons butter substitute with olive oil for lighter option
  • 2 cups chopped broccoli use thawed frozen broccoli if needed
  • 1 tablespoon olive oil can replace with vegetable oil

Method
 

Step-by-Step Instructions
  1. In a small mixing bowl, combine the honey, soy sauce, grated ginger, minced garlic, and red pepper flakes. Whisk together to create a smooth glaze.
  2. In a medium bowl, place the shrimp and pour one-third of the sauce over. Marinate for 30 minutes.
  3. Heat olive oil in a large skillet over high heat. Add broccoli, season with salt and pepper, and stir-fry for 5-6 minutes. Remove from skillet.
  4. In the same skillet, melt butter. Add marinated shrimp and cook for 2 minutes per side until pink and opaque.
  5. Pour in remaining sauce and add cornstarch mixed with water. Simmer for 2-3 minutes until the sauce thickens.
  6. Return broccoli to the skillet and toss gently with the shrimp. Cook for an additional 1-2 minutes.
  7. Serve over rice or pasta and drizzle extra sauce on top.
