Method
 

Baking Instructions
  1. Prepare the dry ingredients: whisk together flour, baking soda, salt, cinnamon, pumpkin pie spice, and oats.
  2. Cream together unsalted butter, brown sugar, and white sugar until creamy and light in color.
  3. Add vanilla extract, molasses, and eggs; mix until smooth.
  4. Gradually combine dry and wet mixtures until thick dough forms. Chill dough for 15 minutes.
  5. Scoop dough onto baking sheets, placing 12 cookies per sheet. Bake at 350°F for 8-9 minutes.
  6. Cool cookies on baking sheet for 4 minutes before transferring to a wire rack.
  7. Make frosting by creaming together butter and marshmallow fluff until light and fluffy.
  8. Add powdered sugar, vanilla extract, and salt; blend until smooth and spreadable.
  9. Assemble pies by spreading frosting on one cookie and topping with another. Chill for 10 minutes.
