Ingredients
  

For the Salmon Balls
  • 1 pound Fresh salmon, skinless and boneless the star of the dish, providing rich flavor and nutrition.
  • 1 cup Breadcrumbs panko preferred for crunch.
  • 2 tablespoons Green onions finely chopped.
  • ¼ cup Fresh parsley finely chopped.
  • 3 cloves Garlic minced.
  • 1 large Egg beaten.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon zest fresh.
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil for cooking.
For the Creamy Avocado Sauce
  • 1 ripe Avocado
  • ½ cup Plain Greek yogurt
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro chopped.
  • to taste Salt
  • to taste Pepper
  • as needed tablespoons Water to thin the sauce.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Dice the salmon into small pieces or pulse in a food processor until coarsely chopped.
  3. Mix in a large bowl the salmon, panko breadcrumbs, green onions, parsley, garlic, egg, Dijon mustard, lemon zest, salt and pepper until well combined.
  4. Shape the mixture into golf ball-sized balls.
  5. Cook in a skillet with olive oil over medium heat for 3-4 minutes on each side until golden brown, or bake for 15-20 minutes in the oven.
  6. For the creamy avocado sauce, blend avocado, Greek yogurt, lime juice, and cilantro until smooth.
  7. Season the sauce with salt and pepper, and add water to adjust consistency if needed.
  8. Cool the salmon balls slightly before serving.
  9. Serve the salmon balls warm alongside the creamy avocado sauce.
