  • 2 tablespoons sake
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh ginger finely grated

  • 4 fillets salmon wild-caught preferred

  • 2 green onions sliced
  • 2 tablespoons toasted sesame seeds

Method
 

Preparation Steps
  1. In a small bowl, whisk together ¼ cup of white miso paste, 2 tablespoons each of mirin and sake, 1 tablespoon of soy sauce, and 1 tablespoon of sugar, along with 1 teaspoon of sesame oil and 1 tablespoon of finely grated fresh ginger. Mix until smooth.
  2. Place 4 salmon fillets in a shallow dish, pour the miso marinade over them, ensuring each piece is thoroughly coated. Seal or cover, refrigerate for at least 30 minutes.
  3. Preheat your oven’s broiler and adjust the rack to 6 inches from the heat source.
  4. Line a baking sheet with foil, coat with cooking spray or oil to prevent sticking.
  5. Discard remaining marinade, place salmon skin-side down on the prepared baking sheet.
  6. Broil the salmon for 8-10 minutes until cooked through and caramelized.
  7. Remove from oven, garnish with sliced green onions and toasted sesame seeds if desired.
  8. Serve hot with lemon wedges on the side.
