Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a large bowl, whisk together the eggs until frothy.
  3. Add cottage cheese and mix until well combined.
  4. Stir in the shredded cheddar cheese until incorporated.
  5. Add chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder. Mix well.
  6. Mix baking powder with a teaspoon of water and add it to the egg mixture.
  7. Pour in olive oil and mix until smooth.
  8. Spoon the mixture into the muffin tin, filling each cup almost to the top.
