- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
- In a large bowl, whisk together the eggs until frothy.
- Add cottage cheese and mix until well combined.
- Stir in the shredded cheddar cheese until incorporated.
- Add chopped spinach, red bell pepper, garlic powder, salt, black pepper, and onion powder. Mix well.
- Mix baking powder with a teaspoon of water and add it to the egg mixture.
- Pour in olive oil and mix until smooth.
- Spoon the mixture into the muffin tin, filling each cup almost to the top.
- Bake for 18 to 20 minutes until golden brown and set.
- Let cool for 5 minutes before removing from the tin.
