Preparation
- Mix the softened cream cheese and shredded sharp cheddar cheese in a large mixing bowl until smooth and creamy, about 2-3 minutes.
- Add minced onion, salsa, ground cumin, cayenne pepper, garlic powder, and a pinch of salt and pepper. Stir until everything is evenly mixed.
- Shape the cheese mixture into a rough ball. If too soft, refrigerate for 15-20 minutes.
- Spread crushed nacho chips on a large piece of plastic wrap. Roll the cheese ball into the chips, pressing to adhere.
- Gently create ridges around the ball to mimic a pumpkin’s shape.
- Insert a small bell pepper stem into the top center of the shaped cheese ball.
- Wrap in plastic wrap and refrigerate for at least 1 hour to firm up.
- Unwrap and place on a platter. Serve with a variety of crackers or fresh vegetables.
