  • 1.5 cups dry brown lentils soaked in hot water for quick cooking
  • 1 teaspoon olive oil for sautéing
For the Aromatics
  • 0.5 cups onion, chopped
  • 1 clove garlic, minced
For Flavor
  • 0.25 teaspoon turmeric
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon ground black pepper
For Serving
  • fresh cilantro, chopped optional garnish

Method
 

Step-by-Step Instructions
  1. Soak the lentils in hot water for about 10-15 minutes.
  2. In a large pot, heat olive oil and sauté the chopped onion and minced garlic for 3-4 minutes.
  3. Stir in the drained lentils and add turmeric, cumin, Italian seasoning, salt, and black pepper.
  4. Pour in boiling water and stir to combine the ingredients evenly.
  5. Simmer the mixture covered on low heat for about 20 minutes until lentils are tender.
  6. Taste and adjust seasoning as necessary, serve over rice or bread and garnish with cilantro if desired.
