  • 1 cup Breadcrumbs or gluten-free breadcrumbs for an alternative
  • ½ cup Grated Parmesan cheese or sprinkle of pecorino
  • 1 large egg or flaxseed meal mixed with water for egg-free
  • 1 teaspoon Garlic powder or fresh minced garlic for bolder taste
  • 1 teaspoon Onion powder or fresh onion for texture
  • 1 tablespoon Italian seasoning or mix of dried oregano, basil, and thyme
For the Soup
  • 8 cups Chicken broth or vegetable broth for a vegetarian version
  • 2 cups Chopped kale or spinach or Swiss chard or collard greens
  • 1 cup Small pasta such as acini di pepe or orzo, or gluten-free pasta

  • optional Fresh parsley for garnish

Method
 

Prepare the Meatballs
  1. In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined and form small meatballs about one inch in diameter.
  2. Set the meatballs aside on a plate while preparing the broth.
Boil the Chicken Broth
  1. In a large pot, pour in the chicken broth and bring it to a rolling boil over medium-high heat.
Add the Meatballs
  1. Once boiling, gently add the meatballs with a slotted spoon and reduce heat to a simmer. Cook for approximately 15 minutes until fully cooked.
Incorporate Greens and Pasta
  1. After 15 minutes, add the chopped kale or spinach and the small pasta. Stir gently and cook for about 10 minutes until pasta is tender yet al dente.
Season to Taste
  1. Taste the soup and adjust seasoning with salt and pepper as needed.
Serve the Soup
  1. Ladle the soup into bowls and garnish with freshly chopped parsley if desired.
