  • 1 medium carrot
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste

  • ½ teaspoon cayenne pepper adjust to taste
  • 1 teaspoon dried oregano
For the Protein & Beans
  • 1 pound ground beef can substitute with ground turkey or lentils
  • 1 can (14 oz) diced tomatoes canned for convenience
  • 2 cups beef broth or vegetable broth
  • 1 can (15 oz) kidney beans drained and rinsed
  • 1 can (15 oz) black beans drained and rinsed
For the Finish

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and carrot, stirring frequently until they soften, about 5 minutes.
  2. Stir in 2 cloves of minced garlic, 1 tablespoon of tomato paste, 1 teaspoon of ground cumin, 1 teaspoon of paprika, ½ teaspoon of cayenne pepper, and 1 teaspoon of dried oregano. Cook for an additional 2 minutes.
  3. Add 1 pound of ground beef to the pot, breaking it up while cooking for about 5–7 minutes until browned.
  4. Stir in 1 can of diced tomatoes, 2 cups of beef broth, 1 can of kidney beans, and 1 can of black beans. Bring to a simmer.
  5. Reduce the heat to low and cover the pot for 1 hour, stirring occasionally.
  6. Taste and adjust the seasoning. Serve warm with toppings like cheese or sour cream.
