Step‑by‑Step Instructions for Hearty Slow-Simmered Beef Chili
- Drizzle 1 tablespoon of olive oil in a large pot over medium heat, add diced onion and minced garlic, sauté until onions are soft and translucent, about 3 minutes.
- Add 1 pound of ground beef to the pot, breaking it apart with a wooden spoon and cook for 5-7 minutes until browned.
- Sprinkle in 2 tablespoons of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, and ½ teaspoon of cayenne pepper, stirring for 1-2 minutes.
- Mix in 1 tablespoon of tomato paste, can of diced tomatoes, and 1 cup of beef broth, stir well and bring it to a gentle boil.
- Reduce heat to low, cover the pot, and let it simmer for at least 1 hour, stirring occasionally.
- After an hour, gently fold in the drained and rinsed kidney beans and continue simmering for an additional 15-20 minutes.
- Before serving, taste and adjust seasoning with salt or pepper as desired.

Notes
This chili gets better the longer it simmers. Consider adding Worcestershire sauce or hot sauce for extra flavor.
