- Create a pocket in each chicken breast by slicing about three-quarters of the way through.
- Season the chicken breasts with salt, pepper, dried oregano, and dried basil. Drizzle with sun-dried tomato oil.
- Stuff chicken breasts with Roma tomato slices, sun-dried tomatoes, mozzarella cheese, and basil leaves. Use toothpicks to seal.
- Sear stuffed chicken in a skillet over medium-high heat until golden brown, about 2 minutes per side.
- Mix minced garlic, balsamic vinegar, and brown sugar in a separate jug and stir to combine. Pour around chicken in the skillet.
- Transfer the skillet to the oven and bake for 10 to 15 minutes until chicken is cooked through and cheese is melted.
- Let chicken rest for a few minutes before serving. Drizzle pan juices over each breast.
