Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and blend until smooth.
  4. Gradually stir in the boiling water until fully combined.
  5. Pour the batter evenly into the prepared pans and bake for 30 to 40 minutes, checking for doneness.
  6. Let the cakes cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
  7. For the cherry filling, mix the cherries with the cherry liqueur and let sit for about 10 minutes.
  8. Whip together the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until you reach soft peaks.
  9. Layer the first cake with mascarpone mixture and cherry filling, repeat with the second layer, and finish with another layer of mascarpone mix on top.
  10. Chill the cake in the refrigerator for at least 30 minutes before serving to set the layers.
