Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a boil. Add 8 ounces of pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of scallops and sear for about 2-3 minutes on each side until golden brown.
  3. Add 3 tablespoons of minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in 1 cup of dry white wine and allow to reduce for about 2-3 minutes.
  5. Reduce heat to medium, stir in 1 cup of heavy cream, and simmer for another 2-3 minutes until it thickens slightly.
  6. Add the cooked pasta back into the skillet and toss gently to coat with the sauce.
  7. Return the seared scallops and add 1 cup of fresh herbs and 2 tablespoons of butter. Season with salt and pepper to taste. Toss to combine.
  8. Serve immediately, garnished with extra fresh herbs if desired.
